1 1/4 cup lukewarm water 1 Tablespoon yeast 1/2 teaspoon sugar 1 egg plus 1 egg white 1/4 cup oil
Grease the muffin tin. IN a medium bowl combine all dry ingredients. Measure 1 cup water. Stir in the yeast and sugar. Set aside to proof until the foam is about 1/2 inch.
In a bowl beat eggs and oil. With your mixer on low, blend in the yeast water. Stir in the flour mix. The batter should be similar to thick cake batter. (add more water by tablespoon full to get the right consistancy.) Beat for 3 1/2 minutes.
Spoon into muffin tin, cover and let rise 20-25 minutes. Bake at 400 degree for 20 minutes.
(If you don't have the sorgum flour, just measure 1/2 cup more of the featherlight mix.)
