1- 6 ounce jar red maraschino cherries 2 1/2 cups GF all-purpose flour 1 cup sugar 4 teaspoons baking powder 1/2 teaspoon salt 2 eggs 1/3 cup butter melted 2/3 cup milk 1- 8 ounce jar green maraschino cherries drained and cut up 1/2 cup chopped pecans 2 teaspoons Xanthan Gum
Grease and flour a loaf pan. Preheat oven to 350 degrees F.
Drain the red cherries, reserving the liquid; add water, if needed, to liquid to equal 1/3 cup. (I use Red cherries only equaling 14 ounces.) Cup up the cherries; set cherries and liquid aside. in a large bowl, combine all of the dry ingredients and whisk to mix. In a small bowl, lightly beat eggs. Add milk and cherry juice and whisk.. Stir the liquid mixture into the dry ingredients just until combined. Fold in the cherries, and pecans. pour into the loaf pan. Bake for 1 hour or until the bread tests done.
