1 egg 3/4 c plus 2 Tbs packed brown sugar 1/2 c butter melted and cooled 1 1/2 tsps. vanilla extract 3/4 c plus 2 Tbs. GF flour 1/2 tsp baking soda 1/8 tsp salt 3/4 c chopped pecans toasted 2/3 c flaked coconut 4 squares (1 oz each) white baking chocolate coarsely chopped 1 tsp Xanthan Gum
In a mixing bowl, beat egg and brown sugar for 3 minutes. Add butter and vanilla; mix well. Combine dry ingredients and whisk to mix well. Gradually add flour mixture to sugar mixture, beating just until blended. Stir in nuts, coconut and white chocolate. Spread into a greased 8 in square pan. Bake at 325 for 30-40 minutes or until a toothpick inserted in center comes out with moist crumbs. (do not overbake.) Cool on a wire rack.
