Toasted Coconut Pie
3 eggs beaten 4 teaspoons lemon juice
1 1/2 cups sugar 1 teaspoon vanilla
1 - 3 1/2 oz. or 1 1/3 cups coconut
1 unbaked deep dish pie shell
Thoroughly combine eggs, sugar, butter, lemon juice and vanilla. Stir in
the coconut. Pour into the unbaked pie shell. Bake at 350 for 40 -45 minutes. Garnish with whipped cream and toasted coconut.
