Peanut Sauce


Peanut Sauce

If peanuts are problematic, this sauce can be made from cashew butter as well. Almond butter will work but may need an extra flavor boost with seasonings. The beauty of nut sauces is the added benefit of vegetable protein and vitmain E.

Base recipe::

2/3 cup GF natural creamy peanut butter
1/2 –3/4 cup hot GF vegetable broth, or more as needed
1-2 teaspoons brown sugar or honey
1 Tbs. GF Worcestshire, Bragg's, Wheat-free soy sauce, or molasses
3 Tbs. Balsamic or rice or apple cider vinegar
1 teaspoon McCormick curry powder
sea salt, to taste

For a spicy sauce add::

GF hot curry powder
fresh grated ginger root
red pepper flakes
or
Thai Kitchen Curry Paste

Creamy Thai Coconut Peanut Sauce::

To the above sauce add:
1 cup or more of stirred coconut milk
the juice from one lime

Whisk the peanut butter with the hot broth until smooth, add the remaining chosen ingredients and whisk to blend well. Add more broth as needed to thin.

This sauce is delicious for pasta noodles, Thai noodles, and veggie stir-fries. Spoon this sauce over hot cooked brown rice dishes.
